Pumpkin Soup

An Australian Favourite, great for those cold winter evenings……

750g pumpkin

1 onion

3 chicken stock cubes

Water, to cover pumpkin

salt and pepper

a dollop of cream

Peel and chop pumpkin and onions. Place in pan with chicken stock cubes and enough water to cover the pumpkin. Simmer until the vegetables are soft. Blend until it is smooth. Add more water if you want the soup to be thinner. It all depends on how you like it!

When you serve, drizzle some cream over the top or drop in a dollop of it!
